How to Make a Healthy Banana Loaf (No Refined Sugar!)
Looking for a simple, protein-packed banana loaf with no refined sugar? This delicious recipe uses ripe bananas, a few pantry staples, and a handful of your favorite mix-ins for a moist, naturally sweet loaf that’s perfect for breakfast, snacking or even a healthy dessert!
Start by preheating your oven to 355°F (180°C) and greasing a loaf pan or lining it with parchment paper. In a large bowl, mash 3 ripe bananas until smooth. Next, add 2 eggs, stir in 1/4 cup of milk, 5 tablespoons of honey, and 1 teaspoon of vanilla extract. This forms the wet base of your batter.
Next, add your dry ingredients. Mix in 1 cup of self-raising flour (or substitute with 1 cup regular flour, ½ tsp baking powder, and ¼ tsp salt), ⅔ cup of protein powder (chocolate protein works especially well), an additional 1 tsp of baking powder, and ¼ tsp of salt. Stir until combined.
Fold in a handful of nuts (walnuts or pecans work great and what I prefer using) and a small handful of dark chocolate chips for added crunch and flavor.
Pour the batter into your prepared pan and bake for about 40-45 minutes, or until a toothpick comes out clean from the center. Let it cool for 15-20 minutes before slicing.
This loaf is dense, flavorful, and keeps well for several days.
