Pita Bread
Ingredients:
3 cups flour
1 tbsp sugar
2 tsp kosher salt
1 cup warm water
2 tbsp olive oil
1 cup active sourdough starter or 7g active dry yeast
How to Make Puffy Homemade Pita Bread (With Sourdough or Yeast!)
There’s nothing like soft, warm pita fresh off the skillet and it’s easier to make than you think. Whether you use sourdough starter or dry yeast, this recipe creates pillowy, golden pitas perfect for stuffing, or snacking straight from the pan.
Start by combining 1 cup of active sourdough starter (or 7g active dry yeast) with 1 cup of warm water. If you're using yeast, let it sit for 5 minutes until foamy (this means it’s activated and ready to go).
In a separate bowl, mix the dry ingredients: 3 cups of flour, 1 tablespoon sugar, and 2 teaspoons kosher salt. Add your wet mixture to the dry, pour in 2 tablespoons of olive oil, and stir until a dough forms.
Knead the dough for about 5 minutes on a floured surface. The dough should be smooth and not sticky, add a bit more flour if needed. Place the dough in a lightly oiled bowl, drizzle a little olive oil on top, cover, and let it rise in a room temperature spot for 1–2 hours or until doubled in size.
Once risen, punch the dough down and divide it into 8–10 equal pieces. Roll each piece into a small ball, cover with a towel, and let them rest for 10–15 minutes.
Now, roll each ball into a flat round, pita-sized! Place them on wax or parchment paper, cover, and let rest again for about 20 minutes.
Heat a cast iron skillet on high and brush lightly with olive oil. Cook each pita like a pancake, place it in the hot pan and wait for it to bubble and puff, then flip and cook the other side until golden.
Serve warm with hummus, or stuff them with fillings, they’re fresh, fluffy, and incredibly delicious!
