Banana Muffins

Ingredients:

3 bananas

2 eggs

¾ cup greek yogurt (plain or vanilla)

¼ cup maple syrup or honey (I prefer honey)

1 tsp vanilla extract

2 cups of flour

1 scoop of vanilla protein powder (I recommend the just ingredients vanilla bean powder)

2 tsp baking powder

1 tsp baking soda

½ tsp cinnamon 

¼ tsp salt

How to Make Fluffy Protein-Packed Banana Muffins!

These vanilla banana muffins are soft, lightly sweet, and loaded with protein, perfect for breakfast on the go or a quick snack. With a base of ripe bananas, creamy greek yogurt, and a scoop of vanilla protein powder, they strike the perfect balance between indulgent and nourishing.

Start by preheating your oven to 350°F and lining a muffin tray with your liners (or grease it well with oil or butter).

In a large bowl, mash 3 ripe bananas until smooth. Crack in 2 eggs, then stir in ¾ cup of plain or vanilla Greek yogurt, ¼ cup of honey or maple syrup (I prefer honey), and 1 teaspoon of vanilla extract. Mix until creamy and well blended.

Then, add in the dry ingredients: 2 cups of flour, 1 scoop of vanilla protein powder (I recommend “Just Ingredients Vanilla Bean"), 2 teaspoons baking powder, 1 teaspoon baking soda, ½ teaspoon cinnamon, and ¼ teaspoon salt. Stir until just combined, the batter should be thick and fluffy.

Spoon the batter evenly into your prepared muffin tin. Bake for 20 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean. Let the muffins cool in the tin for 5 minutes.

 These muffins are slightly sweet and full of banana flavor, with just enough protein to keep you satisfied.
