Chicken Fried Rice
Ingredients:
3 cups of rice
3 cups water
1 tsp salt
2 pounds of diced chicken breasts
½ tsp of salt
½ tsp pepper
½ tsp garlic powder
1 teaspoon corn starch
¼ cup soy sauce
4 eggs
5 medium carrots (1 ½ cup carrots)
1 bag frozen petite peas (1 ½ cup peas)
1 large onion
4 cloves of garlic minced
How to Make Chicken Fried Rice at Home:
This homemade chicken fried rice is packed with juicy marinated chicken, crisp-tender vegetables, and fluffy, flavorful rice, all stir-fried to perfection. It’s savory, satisfying, and better than your local takeout, with fresh ingredients and just the right amount of soy sauce.
Start by cooking 3 cups of rice with 3 cups of water and 1 teaspoon of salt in a rice cooker. Once done, let the rice cool completely. This step is key to keeping your fried rice from turning mushy later on.
While the rice cooks, marinate 2 pounds of diced chicken breast in ½ teaspoon each of salt, pepper, and garlic powder, plus 1 teaspoon cornstarch and ¼ cup soy sauce. Let this sit for about 15 minutes while you prep your vegetables. When ready, heat sesame oil (or regular oil) in a large skillet over medium-high heat and cook the chicken for 6–7 minutes until browned and cooked through. Set aside to cool.
Next, prep your veggies: peel and finely dice 5 carrots (about 1 ½ cups), chop 1 large onion, and set aside 1 ½ cups of frozen petite peas. Sauté the carrots and onion in the skillet over medium heat until the onions turn translucent, then stir in the peas. Push the veggies to one side of the pan and pour 4 beaten eggs onto the other side, scrambling until fully cooked. Add 4 minced garlic cloves to the veggie side and cook until fragrant.
Return the cooked chicken to the skillet and stir everything together. Add the cooled rice and pour in about ⅓ cup of soy sauce, mixing thoroughly to evenly coat the grains. Let everything fry together for a few more minutes until hot and lightly crisped.
