Broccoli Beef Udon Stir-Fry
Ingredients:
Broccoli
Flank steak
Udon noodles
Sesame seeds
¼ cup beef broth
2tbsp soy sauce
1 tsp sesame oil
A dash of mushroom powder
A drop of cooking oil
A spoonful of cornstarch
Sauce:
2tbsp oyster sauce
2tbsp soy sauce
1tsp of dark soy sauce
1tsp sesame oil
1tbsp sugar
1 cup beef broth
1 ½ tbsp cornstarch mixed with 3 tbsp cold water
How to Make Savory Broccoli Beef Udon Stir-Fry:
Slice flank steak thin and whisk up the marinade: ¼ cup beef broth, 2 tablespoons soy sauce, 1 teaspoon sesame oil, a dash of mushroom powder, a drop of cooking oil and a spoonful of cornstarch. Toss in the steak strips and let them soak up the flavors for 20 minutes while you prep the sauce; 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 1 teaspoon dark soy sauce, 1 teaspoon sesame oil, 1 tablespoon sugar and 1 cup beef broth, thickened later with 1½ tablespoons cornstarch mixed into 3 tablespoons cold water.
Heat oil in a wok or pan over medium-high until shimmering, then sear the marinated beef until browned and fragrant. Meanwhile, boil udon noodles in a separate pot until tender, strain, rinse under cool water to stop cooking and set aside.
Remove the beef, add fresh broccoli florets to the pan and sauté 2 minutes until vibrant. Toss in minced garlic with a swirl of oil, frying until golden and aromatic. Return the beef and noodles to the pan, pour in the sauce and stir vigorously as it bubbles and thickens. Sprinkle sesame seeds for crunch.
