Crispy Chicken Caesar Smash Tacos
Ingredients:
2lbs minced chicken
10 mini tortillas
Salt and pepper to taste
Oil for cooking
1 large romaine lettuce diced
⅓ cup parmesan cheese
Caesar dressing:
1 cup mayonnaise
2 tsp dijon mustard
Salt to taste
2tbsp olive oil
1tsp worcestershire sauce
2tsp lemon juice
2-3 garlic cloves minced
1 tsp black pepper
How to Make Crispy Chicken Caesar Smash Tacos:
Portion 2-3 tablespoons of 2 pounds ground chicken onto each of 10 mini tortillas, season with salt and pepper, then gently smash down to form even patties. This "smash" technique crisps everything beautifully.
Heat a skillet with a drizzle of oil over medium-low. Place tacos meat-side down and cook 2-3 minutes until the chicken firms and browns through. Flip to crisp the tortilla until golden and crunchy.
Meanwhile, whisk the Caesar dressing: Blend 1 cup mayonnaise, 2 teaspoons Dijon mustard, salt to taste, 1 teaspoon Worcestershire sauce, 2 teaspoons lemon juice, 2-3 minced garlic cloves and 1 teaspoon black pepper. Slowly emulsify with 2 tablespoons of olive oil until smooth.
Pile on diced large romaine lettuce head and ⅓ cup parmesan shavings, then drizzle generously with dressing. These tacos fuse juicy, crispy chicken with freshness for a protein-rich twist on taco night.
